巴斯克芝士蛋糕的发源地据闻是西班牙城市,多若斯迪亚(San Sebastián),一间名为La Viña Bar的餐厅始创,传统的做法用经典的芝士蛋糕配料︰糖、鸡蛋和忌廉芝士制成,沒有任何挞皮,放在高溫下烘烤,使边缘发焦、变硬,中心保持糊状像卡士达酱。如今流传各地后,巴斯克芝士蛋糕已出现不同变化,例如蛋糕的质感做得更坚实,方便切开。而不变的是粗糙随意的边缘,神秘又焦黑的外表。
